Ingredients and Locker Information

The processors that we currently work with are found below, along with information about the ingredients used in their processing.

Currently, our individual cuts of pork are from from both lockers.  Unless otherwise noted in our list of Individual Cuts Available, the cut you purchase could come from either locker. Please feel free to contact us if you are preferring your pork from a particular locker due to dietary concerns.

When ordering a whole or half hog or lamb, you are welcome to choose between Story City Locker and Milo Locker. We hope the information provided will aid you in determining which locker you would like to work with.  If you have additional questions, please feel free to contact us or the locker.

In order to help our customers make informed choices, we are providing this link which talks about a traditional nitrite cure vs. a Natural (celery) Cure, sometimes referred as “nitrite free” curing.
